I am a firm believer that there is no such thing as too many apples. When you crisp apples, when it says you use 6 cups, you'd better think you're using 12 cups. And so far no one has complained.

This recipe follows that philosophy. Other versions are sprinkled with finely chopped apples. Not this – stuff them, it makes it so good!

The secret to deliciously baked apples is to use varieties that are suitable for baking apples. Jonathon's apples are great for apple brownies because they hold their shape very well. The McIntosh uses them in applesauce, albeit to a lesser extent.
