Pineapple Mango Smoothie – Barefeet in the Kitchen

Using up leftovers from the fridge and freezer often leads to great new recipes. Quite a few of our favorite breakfast smoothies have started this way.

These Spinach Pineapple Mango Smoothies are just that. I recently mixed this smoothie because I wanted to use leftover pineapple juice from the canned pineapple I used for Hawaiian muffins.

When I shared this recipe with a friend, her kids renamed these smoothies “Green Monster Smoothies.”

She also convinced the kids that smoothies and crackers, cheese, and hard-boiled eggs were meals, so you should take notes from her. A special treat they crave!

A drink in which frozen fruit creates a smooth texture. A lot of smoothies come with ice cubes, which is fine, but we prefer it this way. The fruit should be frozen in advance so that you always have the ingredients on hand.

If you have produce that is rotting, you want to freeze it to prevent waste. Simply place the fruit on a baking sheet and freeze. Then transfer the loose frozen fruit to a ziplock bag for later use.

I like to use fresh spinach when I have it on hand, but if I'm staring at some leftover baby spinach, don't hesitate to put it in the freezer. It's not, but it works well when tossed it into a future smoothie.

Personally, I don't care about the flavor after freezing and it doesn't seem to blend in smoothly. However, when it comes to smoothness, you're using spinach, so be sure to blend this extra in and purr it along with the fruit.

All smoothies need extra liquid to help the fruits and vegetables blend together. Pineapple juice is the main, but water is another liquid. Regular cold water will do, but if you have coconut water on hand, it will be delicious.

The combination here is the best. It was so smooth and much more juice-like than other green smoothies.My kids and I enjoyed our smoothies on our backyard patio and our favorite pancakes he made into PB&J sandwiches. It was an enjoyable lunch.

  • Green grapes, preferably frozen

  • organic spinach

Place ingredients in a blender and blend until completely smooth. Pour into glasses and enjoy immediately.
